For the 41st edition of SIGEP – the International Trade Show of Artisan Gelato, Pastry, Bakery and the Coffee World in Rimini, Galatea will present the new probiotic yogurt gelato ViViO’, developed to offer its partners the unparalleled deliciousness of its dessert products while at the same time focusing on consumer wellness, thanks to the presence of a billion live micro-organisms per 100 grammes of finished product. Probiotics are live bacteria which can interact with the intestinal epithelial cells; this is why, when taken daily, they can be useful in balancing the gut microflora, which governs the functioning of the digestive system and aids the development and function of the immune system. Specifically, Viviò contains Florasyn® from two strains of probiotic bacteria of human origin: Lactobacillus rhamnosus IMC 501® and Lactobacillus paracasei IMC 502®.
These are able to withstand gastric acid and the alkali of the biliary tract, and reach the intestines alive and in sufficient quantities. They live at room temperature and become active at body temperature. However, they are dormant at low temperatures and die when subjected to excessive heat.
When preparing Viviò, ice-cream chefs must be extremely careful to avoid processes involving high temperatures, such as pasteurisation. Viviò probiotic gelato is a certified product and unlike any other, because it was developed by Inovafood, a leading company in food innovation and the development of food products and technologies, in collaboration with Synbiotec Laboratori, an offshoot of the University of Camerino and a leader in research into the health benefits of the gut microflora.
Inovafood then offered the concession for its development to Galatea, with the aim of producing and distributing the product. In a country in which 97.1% of consumers state that they are aware of the links between good health and diet (1), 6 out of 10 consumers choose foods seen as ‘healthy’ (2) and 71% of the population has bought a probiotic product in the past 12 months (3), it is essential to respond to a strong market demand, and Galatea is doing this with Viviò, the probiotic yogurt gelato.
